Ingredients for the Fall Casserole

  1. Pumpkin (approximately 8-10 inches in diameter) – for cooking and serving
  2. 2 cups cooked and shredded chicken (or turkey) – for a hearty protein base
  3. 2 cups mixed vegetables (carrots, green beans, and peas) – for a burst of autumn colors
  4. 1 cup diced potatoes – for a comforting starch
  5. 1 cup diced apples – for a hint of natural sweetness
  6. 1/2 cup chopped onions – for aromatic flavor
  7. 2 cloves garlic, minced – for an added depth of taste
  8. 1 cup chicken broth – for moistness and depth of flavor
  9. 1/2 cup heavy cream – for a rich and creamy texture
  10. 1 teaspoon dried thyme – for a warm herbal note

Instructions

  8. Once done, remove the pumpkin from the oven, and with great care, place it on a serving platter.

    Hi Margaret – The highest temperature should be 480 degrees F. The dish is also obviously Food Safe, and it can be used in oven, freezer, & dishwasher. And Yes, we see how the recipe is a little confusing, but yes, you can definitely use canned pumpkin.

    I’m confused. The recipe says to cook it in the pumpkin and serve it directly from the pumpkin. But the photo shows the soup in the casserole dish. Can’t I cook it in the casserole dish and just use canned pumpkin? I just got this casserole in the mail, and I love it! But there were no instructions on how high of a heat limit in the oven. Nor if it’s dishwasher safe. Which tbh, I’d only handwash it.
